Fiji Airways’ latest culinary venture, the Chef’s Table, will offer travellers a taste of Fijian fine dining before their flight. Located within the confines of the Fiji Airways Premier Lounge at Nadi International Airport, any passenger, regardless of which airline they fly, is welcome to book in. All diners also enjoy access to the lounge after their meal.

The Chef’s Table presents a four-course gastronomic journey served in a new (repurposed) dining area within the lounge. It’s an intimate affair with seating for just eight people and, currently, two sittings a day.

What to expect at the Chef’s Table

This experience will set you back FJ$150 (~AU$100) per person. Upon arrival, kick off with a complimentary cocktail or mocktail. The menu, curated by local chefs, features a tasting platter, appetizer, main course, and dessert. Each course is also paired with a matching wine.

The menu will evolve seasonally, embracing a farm-to-table philosophy. Initial highlights include spice-rubbed Pacific yellowfin tuna and lamb cooked flame-grilled and braised. Check out the sample launch menu below.

Tasting Platter – Coconut, the tree of life

  • Lolo rice arancini
  • Bu (young coconut) noodles with smoked ivi (Tahitian chestnut) & coriander pesto
  • Vara (coconut apple) with sea salt, bush lemon & chili flakes
  • Coconut water shot

 

Appetiser – Kusima, from the sea

  • Lumi (spiced seaweed & coconut jelly)
  • Nama tempura (sea grapes)
  • Spice-rubbed Pacific yellowfin tuna,
  • Wild-caught ocean water prawns, ginger
  • Wasabi espuma, tomato caviar, pumpkin fronds

 

Main Course – Fire & Smoke

  • Lamb two ways – flame grilled tenderloin, six hour braised & smoked
  • Cassava pave, braised cabbage puree, balsamic onion mousse

 

Dessert – Sugar & Spice

  • House made curry leaf & cardamom ice cream
  • Spiced purini (Fijian coconut caramel pudding)
  • Mango lassi

Reservations for the Chef’s Table must be made at least 24 hours in advance through the booking form available on the Fiji Airways website. In addition to the culinary experience, guests enjoy complimentary access to the Fiji Airways Premier Lounge after their visit, even if they are flying on a different airline.

Currently, you can dine for lunch at 1:00 pm or dinner at 6:30 pm. Fiji Airways tells us that a second dinner slot is also slated to launch later in the year. Expect to spend around 90 minutes enjoying your meal.

Given that lounge entry normally costs FJ$99 (~AU$66), the Chef’s Table dining offers excellent value for money if you were planning to buy access to the lounge anyway.
