I am trying to search for flight from Hong Kong To Sydney and am wondering why I can't see any Jetstar flights being offered. We want to fly early February so realise that for Jetstar probably not available but I have been checking earlier months and can see that there are no available flights in business class. I am sure I must be missing something?

It's unlikely you will find any FF availability as JQ don't operate on the HKG-SYD route or SIN-SYD route so a connection with JQ to SYD would involve a minimum of 3 sectors.
Your best bet in this case would most probably be with Cathay Pacific (CX) who generally have quite good award availability options for QF FF's, and as a bonus they tend to release more redemption seats closer to the flight. If you are looking in Economy you may be able to find some QF seats however in order to score business you'll generally need to book at schedule release to secure the seats(around a year prior to the flight). Occasionally more seats do open up but CX would most likely be your best option.
Jetstar don't fly from HKG to SYD... For business class CX is your best bet. You can almost bet on CX releasing J seats 2 weeks before your departure date bookable with QFF points.. that would be my pick :)
